Trim excess fat (as much as possible). Rub mustard all over and then sprinkle the rub on to cover the whole pork butt and pat on.

Set smoker to 225º - cook to internal temp of 165º. Put in a tin pan and cover with aluminum foil, put back in smoker and cook to internal temp of 200º. Ket rest 1 to 2 hours, pull apart with forks or claws. Plan on 7 to 8 hours total cook time.
